Pistachio Shortbread

Ingredients
1 cup butter, room temp
½ cup brown sugar
½ cup sugar
1 egg plus two egg yolks
3 cups self-rising flour
1 cup roasted & salted pistachios, chopped

Directions
1. Preheat oven to 350 degrees.
2. In a large bowl, cream together butter and sugars.
3. Add egg and egg yolks.
4. Slowly incorporate flour to form dough.
5. Stir in chopped pistachios.
6. Roll dough out to ¼ inch thickness. Cut with cookie cutter or knife.
7. Place cutouts on ungreased baking sheets. Bake 10-12 minutes. Allow cookies to cool.
