Poached Egg, Sausage and Onion Tarts

For tart crust:
½ cup shortening
1 cup flour
¼ cup water
½ tsp salt

1. Preheat oven and baking stone to 350 degrees.
2. Mix all tart ingredients.
3. Roll out to 1/8 inch thick, cut into rounds. Cover to keep moist.

For Topping:
8 oz pork sausage
4 Tbsp butter
1 Sweet yellow onion, sliced in thin wedges
1 tsp sugar
Dash thyme
1 Tbsp cream
6 eggs
Salt and pepper

1. Melt butter in a stove top skillet.
2. Add sugar and onions, cook at low heat for 15 minutes, stirring occasionally.
3. Add cream and thyme to skillet. Cook at low heat an additional 15 minutes, stirring occasionally.
4. Remove onion with a slotted spoon, spread evenly on tarts. Bake 20-25 minutes until golden.
5. Press pork into patties. Brown in a stovetop skillet. Cover and keep warm.
6. Poach eggs.
7. Set sausage in tart and then spoon poached egg on top. Season with salt and pepper.
