Potato Puff

Ingredients
4 baking potatoes, peeled and quartered
1 tsp salt
¼ cup butter
3/4 cup cream
1 cup cheddar cheese
1 egg plus one egg yolk

Directions
1. Place potatoes in a stockpot. Cover with water, add salt. Boil until tender. Drain and mash.
2. Melt butter in a saucepan. Add cream and ¾ cup cheese, cook over low heat until melted.
3. In a large bowl, stir potatoes and cream mixture. Add egg and egg yolk. 
4. Grease a round cake pan. Pour potato mixture into pan. Sprinkle with remaining ¼ cup cheese.
5. Bake for 35-40 minutes, until puffy and golden brown.
