Potato Smash with Spinach

Ingredients
4 baking potatoes
2 Tbsp butter
1 clove garlic, minced
Cajun seasoning
1 bunch spinach, tough stems removed
½ cup Monterrey Jack cheese, shredded
Salt and pepper

Directions
1. Preheat oven to 350 degrees.
2. Wash potatoes. Pick with a fork. Bake potatoes until soft, about 2 hours. Remove potatoes from oven.
3. Melt butter in a small skillet. Add garlic and sauté fragrant. Set aside.
4. Grease an 8x8 casserole pan.
5. Remove potato skins, smash potatoes into casserole pan. Drizzle with garlicky butter, sprinkle with Cajun seasoning. Top with fresh spinach and cheese. Bake until cheese has melted, approx. 15 minutes.
6. Season with salt and pepper before serving.
