Potatoes n’ Greens with Fried Eggs

Ingredients
4 pieces bacon, cooked and crumbled
6 red potatoes, diced
¼ cup yellow onions, chopped
Butter
¼ tsp sweet paprika
3 cups collard greens, stems removed, leaves chopped
Salt and pepper
paprika


Directions
1. Fry bacon crisp in a cast iron skillet on stovetop. Remove bacon from pan, set aside to drain.
2. Add potatoes and onions to bacon greased skillet, season with salt and pepper. Cook crisp. 
3. Melt a sliver of butter to skillet. Add greens, season with paprika and sauté tender.
4. Remove from heat, sprinkle with bacon crumbles. Cover to keep warm while eggs fry.
5. Fry eggs sunny side. Season with salt and pepper.
6. Top potatoes n’ greens with fried eggs.
