Quick Potato Soup
Ingredients
4 cups potato, peeled and diced
¼ cup sweet yellow onion, chopped
½ tsp minced garlic
½ cup ham, diced
2 tsp instant chicken broth powder
1 tsp ham base
2 Tbsp butter
2 Tbsp flour
1 cup cream
Salt and pepper to taste
Directions
1. Place potatoes, onion and garlic in a heavy stockpot. Cover with one inch of water. Boil 10 minutes.
2. Reduce heat to low. Add ham, chicken broth and ham base.
3. Meanwhile, melt butter in a skillet. Whisk flour and butter to create roux. Slowly add cream, whisking constantly over medium heat. Continue to cook 1-2 minutes until mixture thickens.
4. Whisk flour mixture into stockpot. Salt and pepper to taste. Cover and simmer 15 minutes before serving.
