Red Beans and Rice

I love the entire south.
But of the entire south, I love Louisiana best.

Red Beans and Rice

Ingredients
1 tablespoon bacon grease
1/2 cup yellow onion, chopped
2 cloves garlic, minced
1/4 cup Hot pepper, chopped
1/2 cup Mild pepper, chopped
1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces
1 tsp Cajun seasoning
1 cup chicken stock, reduced sodium
4 cups white rice, cooked
1 cup red beans with juice, cooked soft



Directions
 1. Heat bacon grease in a large stockpot to medium. Add onion, garlic, peppers and sausage. Sauté until vegetables are tender.
2. Add Cajun seasoning, stock, rice and beans, bring to boil stirring constantly and reduce to simmer until creamy consistency is reached, 15-20 minutes.
