Roast Cauliflower and Squash
Ingredients
1 head cauliflower, cleaned and cut into small florets
1 yellow squash, cleaned, seeds removed cut to workable pieces
1 small red onion, cut and quartered
¼ tsp garlic powder
½ tsp crushed red pepper
1 cup garden variety marinara sauce
1 cup sharp cheddar, shredded
¼ cup Romano cheese, shredded
3 pieces bacon, cooked and crumbled
Directions
1. Preheat oven to 400 degrees. Grease a 9 x 13 casserole pan.
2. In a large bowl, toss together cauliflower, squash, onion and marinara sauce.
3. Spoon into casserole pan. Sprinkle with garlic powder and pepper.
4. Cover loosely with foil and cook 15 minutes.
5. Remove from heat, sprinkle with cheddar and Romano cheeses. Top with crumbled bacon.
6. Place in oven uncovered for an additional 15 minutes.
