Rueben Salad

Rueben Salad
with Russian dressing

For Russian Salad Dressing:
½ cup mayo
¼ cup cream
½ cup chili sauce
¼ tsp black pepper
1 green onion, chopped

Combine all ingredients in a jar. Shake vigorously.

For salad:
2 cups green cabbage, shredded
3 mushrooms, chopped
¼ cup red pepper, chopped
1 Roma tomato, chopped
3 eggs, hardboiled, peeled and chopped
10 oz deli corned beef, sliced thin
4 slices Swiss cheese, cut in strips
4 Tbsp sweet pickle relish

1. Prepare plates with a bed of shredded cabbage.
2. Sprinkle chopped mushrooms, red pepper and tomato over cabbage.
3. Line eggs, beef and cheese across cabbage.
4. Spoon relish to garnish.
5. Serve with Russian dressing.
