Rustic Focaccia Bread

Ingredients
2 tsp sugar
1 packet rapid rise yeast
1 ½ cup warm water
½ tsp salt
1 Tbsp vege oil
3 cups bread flour
2 green onions, chopped
½ cup pepperoni, chopped
1/3 cup sun dried tomatoes, chopped
¾ cup Monterey Jack cheese, shredded
Marinara for serving


Directions
1. Mix sugar and yeast in a bowl. Add water. Allow yeast to swell for 5 minutes.
2. In a large bowl, combine 2 cups flour, salt and oil. Pour swelled yeast over flour. Knead into dough. Add additional flour if dough is too sticky.
3. Lightly grease a pizza stone. Roll dough out to edges. Cover with a moist towel and allow to rise 30 minutes.
4. Preheat oven to 375 degrees.
5. After dough has risen, distribute onions, pepperoni and tomatoes and press lightly into dough.
6. Bake 25 minutes.
7. Remove from oven, sprinkle with cheese and finish for under broiler.
8. Cut in wedges and serve with marinara.
