Sandwich Stuffed Tomatoes
Ingredients
1 packet ranch seasoning & dressing mix
½ cup sour cream
½ cup half and half
6 large tomatoes
8 oz ham, diced
8 oz cheese, diced
3 green onions, chopped
2 banana peppers, chopped
Lettuce and Sprouts for serving
Salt and black pepper
Directions
1. In a large bowl, whisk together ranch seasoning, sour cream, and half and half.
2. Add ham, cheese, onions and peppers to bowl, Stir to coat. Refrigerate 30 minutes.
3. Cut 2 inches around tomato core. Use a spoon to scoop out tomato innards. Rest tomatoes upside-down on paper towels to drain excess liquid.
4. Fill tomatoes with sandwich stuffing and arrange on a bed of lettuce. Sprinkle with sprouts and season with salt and pepper.
