Sausage Stuffed Buttercup Squash
Ingredients
2 medium Buttercup Squash
16 oz spicy pork sausage
2 Tbsp butter
1 ½ cup bread, chopped
½ tsp Dickie Bird Garlic Salt
3 green onions, chopped
2 hot peppers, chopped
1 egg
2 Tbsp mayo
2/3 cup Monterrey Jack cheese, shredded
Directions
1. Preheat oven to 350 degrees.
2. Prick squashes with a knife and set on a baking sheet. Cook 1 hour. Remove from oven, cut along rim and scoop out seeds.
3. Brown pork sausage in a non-stick skillet. Add butter, breadcrumbs, garlic salt, onions and hot peppers. Sauté 1-2 minutes. Remove from heat.
4. Add egg and mayo to skillet. Stir to coat. Scoop mixture into prepared squash.
5. Top squashes with shredded cheese. Bake 25 minutes. Finish under broiler to create a crusted cheese top.
