Soft Ginger Cookies

Good to settle an upset tummy.

Soft Ginger Cookies

Ingredients
¾ cup butter, softened
1 cup brown sugar
1 egg plus one egg yolk
1/3 cup molasses
1 tsp ginger
½ tsp cinnamon
1 tsp baking soda
1/4 tsp salt
2 heaping cups all-purpose flour
Granulated sugar for rolling

Directions
1. Preheat oven to 350 degrees.
2. Cream together butter and sugar until smooth.
3. Beat in egg, egg yolk, and molasses. 
4. Add ginger, cinnamon, baking soda and salt. Mix well.
5. Incorporate flour to form dough.
6. Roll small balls of dough in granulated sugar, and place on ungreased baking sheets.
7. Bake 10-12 minutes, remove from oven. Cool.
