Spinach Egg Melt

Ingredients
¼ cup sweet red and yellow peppers, sliced thin
1 green onion, chopped
5 eggs
3 Tbsp cream
Salt and black pepper
½ cup fresh spinach, washed and chopped
¼ cup sharp cheddar cheese, shredded
¼ cup Monterrey jack cheese, shredded
2 bread hoagies


Directions
1. Preheat oven broiler.
2. Grease a large skillet. Sauté peppers and onions 1-2 minutes.
3. In a large bowl, whisk together eggs and cream. Season with salt and pepper.
4. Pour egg mixture into skillet, sprinkle with spinach. Do not stir. Cook until set. Remove from heat. Cut in half
5. Cut hoagies lengthwise, sprinkle cheddar on tops and Monterrey Jack cheese on bottoms. 6. Place under broiler until cheese hot and bubbly.
7. Use a spatula to stuff sandwiches with spinach egg mixture. 

8. Serve hot.
