Spinach Egg Salad
Ingredients
1 bunch fresh spinach, chopped
2 Tbsp water
6 eggs, hardboiled, peeled and chopped
1 pkg Knorr vegetable dip mix¾ cup sour cream
¾ cup mayo
2/3 cup half & half
1/3 cup red bell pepper, chopped
2 green onion, chopped
4 pieces peppered bacon, cooked and crumbled
Bread or crackers for serving
Directions
1. Place spinach in a non stick skillet. Sprinkle with water. Wilt over low heat.
2. In a large bowl, stir together Knorr vegetable dip mix, sour cream, mayo and half & half.
3. Stir in spinach, eggs, pepper and onions.
4. Cover and refrigerate for 1 hour.
5. Sprinkle with crumbled bacon before serving,
6. Serve with sliced bread or crackers.
