Spinach Egg Sliders with Caramelized Bacon and Onions
Spinach is one of the latest crops we harvest during the season. Because of its cold hardy nature, it’s also one of the earliest crops we enjoy in spring!
Spinach Egg Sliders
with caramelized bacon and onions
Ingredients
2 pieces applewood bacon
½ cup sweet yellow onion, sliced thin
2 tsp sugar
4 eggs
2 Tbsp cream
Salt and pepper
2 cups fresh spinach
¼ cup cheddar cheese, shredded
6 bread rolls
Directions
1. Cut bacon into ½ inch pieces. Fry crisp in a stovetop skillet.
2. Add onion to skillet. Sprinkle with sugar and continue to cook at low heat until onions are caramel brown, about 15 minutes. Remove from heat and drain oil.
3. Whisk together eggs and cream in a small bowl. Season with salt and pepper.
4. Fry and scramble eggs.
5. Heat oven broiler. Place spinach on a baking sheet. Sprinkle with cheese and top with caramelized bacon and onions. Broil until melted.
6. Assemble sliders: Fill each bread roll with egg, then top with cheesy spinach and caramelized bacon and onions.
