Spinach Lasagna Rollups

I use as much spinach as possible fresh before wilting forces me to blanch and freeze. This recipe for spinach lasagna rollups is a different way to use and enjoy fresh spinach.

Spinach Lasagna Rollups

Ingredients
8-10 lasagna noodles, cooked according to package, then cooled in fridge
2 cups ricotta cheese
1/8 tsp salt
1/8 tsp garlic powder
1/8 tsp red pepper
1/8 tsp fresh milled black pepper
3 green onions, chopped
1 bunch fresh spinach
2 cups marinara sauce
1/2 cup Monterrey jack cheese, shredded

Directions
1. Preheat oven to 350 degrees.
2. Grease a 9x13 casserole dish.
3. In a large bowl, mix ricotta with seasonings and onions.
4. Lay out noodles. Spread with ricotta mixture. Top with a layer of fresh spinach. Roll up each noodle and place seam down in greased casserole dish. 
5. Cover casserole loosely with foil. Bake 20 minutes. 
6. Remove from oven. Spoon sauce over rolls. Sprinkle with cheese. Return to oven to bake an additional 20 minutes uncovered. Serve immediately.
