Spinach Swiss Quiche
Real men DO eat quiche. Popeye himself would love this one, with body building iron (spinach) and protein (egg) packed inside a rustic hearty crust.
Spinach Swiss Quiche
Ingredients
¼ cup butter flavored Crisco
Dash salt
1/4 cup cold water
3/4 cup flour plus additional flour for rolling
½ cup smoked kielbasa, diced
1 cup fresh spinach
4 eggs
2 Tbsp heavy cream
¼ tsp coarse ground black pepper
¼ cup Swiss cheese, shredded
Directions
1. Preheat oven to 375 degrees.
2. In a large bowl, mix Crisco, water, salt and flour to form dough. On a floured surface, roll out dough to ¼ inch thickness. Press into a small springboard pan, working dough 1 inch up sides. Prick bottom crust with fork. Bake for 10 minutes. Remove from oven.
3. Grease a skillet. Brown kielbasa over med heat.
4. Remove skillet from heat and add spinach to wilt.
5. Whisk eggs, cream and pepper in a large bowl.
6. Spread sausage and spinach in crust. Pour egg mixture over top. Sprinkle with Swiss. Bake for 25 minutes. Finish under broiler 3 minutes for a hot, bubbly cheese crust.
