Squash Fritters
Ingredients
1 zucchini squash
1 yellow squash
1/8 cup diced onion
1 egg
2/3 cup self-rising flour
1/8 tsp salt
1/8 tsp cayenne pepper
1/8 tsp black pepper
Vegetable oil for frying
Directions
1. Use a cheese shredder to shred squashes. Press pulp with paper towels to remove excess moisture.
2. In a large bowl combine shredded squash, onion, egg, flour, salt and seasonings.
3. Preheat oven to 375 degrees.
4. Heat ½ inch oil in a cast iron skillet to 350 degrees.
5. Form squash mixture into patties; fry each side until golden brown.
6. Finish patties, baking in oven for 15 minutes.
7. Serve hot.
