Squash Pie with Caramelized Bacon Crumbles

Ingredients
2 cups flour
1 tsp baking powder
4 eggs
2 Tbsp butter flavored Crisco
1 Tbsp cream
Dash salt and pepper
1 summer squash, sliced thin
1 sweet yellow onion, sliced thin
3 sliced bacon, cut in ½ inch pieces
1 tsp oil
1 Tbsp brown sugar

Directions
1. Preheat oven to 375 degrees. Grease a 8 inch springboard pan.
2. In a large bowl, mix flour, baking powder, 1 egg and Crisco to crumbles. Press into pan. Bake 15 minutes.
3. In a small bowl, whisk together remaining 3 eggs, cream, salt and pepper.
4. Circle squash and onion slices to cover crust. Pour egg mixture over top and return to oven for 20-25 minutes or until egg is well set.
5. Fry bacon, 1 tsp oil and brown sugar in a stovetop skillet over low heat.
6. Remove pie from oven, sprinkle with caramelized bacon pieces. Serve immediately.
