Squash Pups
A hush puppy packed with Vitamins A, C and carotenoid content!
Squash Pups
Ingredients
1 cup winter squash puree
1 cup whole ricotta
Salt and pepper
½ tsp paprika
1 tsp baking powder
1 cup self-rising flour
Vegetable oil for frying
Directions
1. Preheat oven to 350 degrees.
2. In a large bowl, combine squash and ricotta.
3. Season with salt and pepper . Stir in paprika, baking powder and flour. Allow dough to rest for 15 minutes.
4. Heat 1/2 inch oil in a cast iron skillet to 350 degrees.
5. Drop dough by spoonful into oil. Turn as sides brown.
6. Drain on paper towels.
7. Place on baking sheet. Finish pups in oven for 10-15 minutes. Serve hot.
