Stuffed Patty Pan Squash

Ingredients
2 large Patty Pan squash
8 oz ground sausage
1/8 cup red onion, chopped
4 mushrooms, chopped
4 eggs
2 Tbsp cream
Salt and pepper
1/2 cup Colby jack cheese, shredded


Directions
1. Preheat oven to 375 degrees.
2. Prick squashes three times on top. Place on baking sheet bake for 30 minutes.
3. Grease a skillet. Brown sausage. Add onions and mushrooms, sauté tender. Remove from heat.
4. Whisk together eggs and cream. Season with salt and pepper. Scramble soft.
5. Cut top off Patty Pans and scoop out innards, removing seeds.
6. Fill squashes with eggs and sausage, top with cheese, and finish under broiler until cheese is hot and bubbly.
