Summer Skillet Breakfast
Ingredients
1 Tbsp vegetable oil
1 clove garlic, minced
3 potatoes, scrubbed and cut bite-sized
Salt and pepper
¼ tsp red pepper
1 yellow summer squash, scrubbed and cut bite-sized
1 bunch kale, stems removed and chopped
4 eggs
4 pieces bacon
Directions
1. Heat oil in a large cast iron skillet.
2. Season potatoes with garlic, salt and peppers. Fry crisp.
3. Add squash and kale to skillet, cook light.
4. Fry eggs sunny side, bacon crisp.
5. Divide vege mixture onto plates. Top with eggs and bacon. Serve hot.
