Sweet Potato and Bean Burritos
Ingredients
2 cups sweet potato, cooked and mashed
¼ tsp onion powder
¼ tsp garlic powder
¼ tsp chili powder
1 tsp salt
1 tsp cayenne pepper
4 pieces applewood bacon, cooked crisp, oil reserved
1 cup red beans, cooked and rinsed
¼ cup green pepper, chopped
3 green onions, chopped
1 cup cheddar cheese, shredded
6 flour tortillas
Chopped avocado, tomato and onion greens for serving.
Directions
1. Preheat oven to 375 degrees.
2. In a stovetop skillet, heat mashed potato. Stir in onion, garlic and chili powder, salt and cayenne pepper.
3. In a small sauce pan, heat bacon grease with beans, green peppers and onion whites.
4. Lay out flour tortillas. Spread with seasoned sweet potatoes, sprinkle with bean-vege mix, bacon crumbles and cheese. Roll burrito style. Place seam down in a greased casserole dish.
5. Bake 20-25 minutes.
6. Garnish with fresh veges before serving.
