Sweet Potato Salad
Ingredients
3 large sweet potatoes, peeled, cut bite size
½ cup mayo
½ cup half & half
1 Tbsp mustard
1 Tbsp honey
1/8 tsp minced garlic
1/8 tsp paprika
Salt and black pepper
4 eggs, hardboiled, peeled and chopped
2 green onions, chopped
¼ cup sweet orange pepper, chopped
6 oz Canadian bacon, diced
Directions
1. Heat a stockpot of salted water. Cook potatoes until just tender. Drain and chill.
2. In a large bowl, whisk together mayo, half& half, mustard, honey, garlic, paprika, and season with salt and pepper.
3. Add potatoes, eggs, onions, pepper and Canadian bacon to bowl, Stir to coat. Refrigerate 2-3 hours before serving.
