Toffee Peanut Crumble Cookies
Ingredients
1 cup toffee covered peanuts
1 tsp cinnamon
1 cup butter, softened
1 cup sugar
½ cup brown sugar
2 eggs
1 tsp vanilla extract
1 tsp baking powder
½ tsp salt
2 heaping cups flour
Directions
1. Preheat oven to 350 degrees.
2. Place peanuts in a food processor and process on high until crumbs. Pour into a shallow dish. Add cinnamon and sift to stir. Set aside.
3. Cream butter and sugars in a large bowl.
4. Add eggs, extract, baking powder and salt to bowl. Mix well.
5. Incorporate flour to form dough.
6. Roll dough small balls. Roll in toffee crumble.
7. Place on ungreased baking sheets. Bake 10- 12 minutes. Cool.
