Quick Chicken n’ Dumplins

For dumplin dough:
1 cup self-rising flour
dash salt
1 Tbsp white sugar
2 Tbsp butter, melted
3/4 cup buttermilk

1. In a large bowl, knead together dumpling ingredients.
2. Roll out dough to 1 inch thickness, on a lightly floured surface.
3. Cut dough in 2 inch squares. Set aside.

For casserole:
2 Tbsp butter
1 (10oz) can condensed cream of chicken soup with herbs
½ cup buttermilk
1 clove garlic, minced
2 green onions, chopped
2 large mushrooms, chopped
2 cups chicken, cooked and chopped

1. Preheat oven to 350 degrees.
2. Melt butter in a large saucepan. Stir in soup, buttermilk and garlic. Whisk smooth
3. Add green onions, mushrooms, and chicken. Stir to coat.
4. Pour mixture into an 8x8 baking dish. Top with dumpling dough.
5. Cover dish loosely with aluminum foil. Bake 30 minutes. Remove foil and return to oven for 15 minutes.
