Vegetable Stuffed Winter Squash

Ingredients
2 Large Winter Squash
4 Tbsp butter
1 clove garlic, minced
4 mushrooms, chopped
1/8 cup green pepper, chopped
2 green onions, chopped
8 oz cream cheese
2 egg yolks
2 cups herb seasoned stuffing
4 pieces bacon, cooked and crumbled (optional)
4 Tbsp Romano Cheese, shredded

Directions
1. Preheat oven to 375 degrees.
2. Pierce squashes with a knife. Place on a baking sheet. Bake 1-2 hours, until cooked thoroughly.
3. Cut squashes in half lengthwise. Scoop out seeds. 
4. Heat butter in a large skillet. Add garlic, mushrooms, green pepper, and onions, sauté tender. Add cream cheese to melt. 
5. Remove from heat. Stir in stuffing, egg yolks and bacon (if desired). Fill squash with stuffing mixture. Sprinkle with Romano. Bake 25-30 minutes.
