Wild Onion Casserole

Wild onions are plentiful in these parts. We see them as soon as the snow melts, and smell them as soon as mowing season begins.




Wild Onion Casserole

Ingredients
4 large baking potatoes, scrubbed
1 Tbsp vegetable oil
1 pound spicy sausage
½ cup water
3 spring onions, bulbs discarded, greens chopped
6 eggs
1/3 cup cream
Salt and pepper
1 cup sharp cheddar cheese, shredded

Directions
1. Preheat oven to 375 degrees.
2. Grease a baking sheet. Slice potatoes thin and spread on baking sheet. Bake until tender, about 10 minutes.
3. Grease a skillet. Cook sausage and onion in water, breaking sausage to crumbles as it cooks.
4. In a large bowl, whisk together eggs and cream. Season with salt and pepper.
5. Grease a 9x13 inch casserole dish. Layer potatoes, sausage and cheese twice. Pour egg mixture over casserole and top with cheese.
6. Bake for 30 minutes. Remove from oven. Cut into squares.
7. Serve immediately.
