Winter Squash Bread Rolls

Squash adds a healthy dose of alpha-carotene and beta-carotene, a melt-in-your-mouth soft center, and a warm orangish glow to this bread.

Winter Squash Bread Rolls

Ingredients
1 Tbsp sugar
1 packet rapid rise active dry yeast
1 cup warm water
1/4 cup butter
½ cup cream
¾ cup winter squash puree
¼ cup sugar
½ tsp salt
5-6 cups self-rising flour

Directions
1. Combine 1 Tbsp sugar, yeast, and water in a small bowl. Allow to swell for 5 minutes.
2. Melt butter in a saucepan over low heat. Add cream to warm.
3. In a large bowl, combine squash puree, sugar and salt. Pour cream and yeast mixtures into bowl. 
4. Knead in flour to form dough. Dough should be soft and elastic, not sticky. 
5. Cover dough and allow to rise until doubled in size.
6. Punch down. Cut dough into 12 equal pieces. Place in a lightly greased casserole dish. Allow one hour to rise. 
7. Preheat oven to 350 degrees. Bake rolls for 25-30 minutes, until crust is golden.
