Boneless Buttermilk Fried Chicken
Ingredients
Skinless boneless chicken thighs, cut in pieces
1 egg
½ cup buttermilk
2 cups flour
1/2 tsp salt
½ tsp garlic powder
½ tsp onion powder
½ tsp coarse ground black pepper
Vegetable oil for frying
Directions
1. Whisk eggs and buttermilk in a shallow dish. In a second shallow dish, sift together flour and seasonings.
2. Drench chicken pieces in flour, egg, and again in flour. Allow 15 minutes to rest. Dust again with flour before frying.
3. Preheat oven to 350 degrees.
4. Preheat fry oil to 350 degrees.
5. Fry chicken in small batches until golden brown. Finish in oven for 10 minutes.
6. Serve hot.
