Broccoli with Shrimp Alfredo
Ingredients
2 Tbsp olive oil
12 oz uncooked shrimp, deveined and tail removed
1 shallot, finely chopped
1 clove garlic, minced
2 green onions, chopped
1 (15 oz) jar Alfredo sauce
Fresh milled black pepper
2 heads fresh broccoli, cut bite size
Directions
1. In a large saucepan, sauté oil, shrimp, shallot, garlic and onion until shrimp is pink. Reduce heat to simmer. Pour Alfredo over shrimp. Season with fresh pepper.
2. Bring a large stockpot of salted water to boil. Blanch broccoli for 1 minute. Place immediately in ice bath to halt cooking. Drain before broccoli has cooled completely.
3. Divide broccoli on plates, ladle Alfredo over top. Garnish with additional pepper.
