Ranch Potato Salad

Ingredients
2 lb red potatoes, scrubbed clean
½ tsp salt
¼ cup mayo
¼ cup ranch
2 tsp garlic oil
2 oz cheese, diced to cubes
1/8 cup Anaheim pepper, chopped
3 green onions, chopped
3 pieces bacon, cooked and crumbled
Black pepper to taste
Lettuce for serving

Directions
1. Place potatoes in a heavy stockpot. Cover with water, add salt. Boil until just tender, drain. Place in refrigerator to cool completely.
2. In a large bowl combine mayo, ranch, garlic oil, cheese, pepper, onion and bacon. Stir well.
3. Cube cooled potatoes. Add to bowl. Toss to coat. Season with pepper to taste.
4. Cover and refrigerate 1 hour before serving. Serve on a bed of lettuce greens.
