1 Tbsp vegetable oil
1 tsp sesame oil
1 clove garlic, minced
4 large beets, peeled and cut bite size
Salt and pepper
1. Heat oil in a skillet.
2. Sauté garlic until fragrant.
3. Add beets, season with salt and pepper. Sprinkle with sesame seeds. Stir fry for 5 minutes, beets should be cooked through and crisp, sesame seeds golden brown. Serve immediately.
*Cold leftovers are great tossed in salad with crisp lettuce greens and a tangy vinaigrette.
