Sorghum Sandwich Cookies

½ cup butter flavor Crisco
½ cup sorghum syrup
½ cup sugar
1 tsp cinnamon
1 tsp ginger
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
1 egg
2 heaping cups flour
10 oz vanilla melting wafers

1. Preheat oven to 350 degrees.
2. In a stovetop skillet, melt Crisco and sorghum over low heat. Pour into a large bowl.
3. Add sugar, cinnamon, ginger, baking powder, soda, salt and egg to bowl. Beat to combine.
4. Incorporate four to form dough.
5. On a flour-dusted surface, roll out dough to 1/8 inch thickness. Cut with round cutter. Cut cookies in half. Place on baking sheet.
6. Bake 10 minutes. Cool.
7. Melt wafers in a double broiler. Dip one half cookie in melted wafer and make sandwich. Cool.
