Warm Sausage and White Bean Salad
With herbed flat bread
For flat bread with fresh herbs:
Ingredients
1 Tbsp lard
½ cup warm water
Dash salt
2 cups self-rising flour plus additional flour for rolling
Fresh herbs, snipped: I used basil, chives and parsley.
Directions
1. In a large bowl, soften lard in warm water.
2. Add salt and herbs.
3. Knead in flour.
4. Cover bowl and allow dough to rest for 30 minutes.
5. Preheat a nonstick skillet to medium.
6. Break off a small piece of dough. Roll out on a floured surface.
7. Fry each side for 1-2 minutes. Remove from heat and cover to keep
warm.
For Warm Sausage and White Bean Salad:
Ingredients8 oz fresh kielbasa
3 radish, chopped
¼ cup mild green pepper, chopped
1 cup white beans, fully cooked
1 bunch fresh spinach, chopped
2 green onions, chopped
3 Tbsp Caesar salad dressing
Directions
1. Preheat oven to 350 degrees.
2. Liberally grease a cast iron skillet. Brown sausage on both sides. Cover with foil. Bake 20 minutes.
3. Add radish, green pepper and beans to skillet for last 5 minutes cook time. Remove from oven, chop sausage and drain excess oil.
4. In a large bowl, toss together spinach, onions and Caesar dressing.
5. Assemble: Fill flat bread with spinach salad, top with sausage mix.
