Chicken Zucchini Soft Tacos
Ingredients
4 cups chicken, cooked and chopped
1 Tbsp oil
½ cup water
1 tsp chili powder
1/2 teaspoons cornstarch
1/2 teaspoon salt
1/2 teaspoons smoky paprika
1/4 teaspoon coriander, ground
1/4 teaspoon cayenne pepper
Fresh milled black pepper
1 zucchini, chopped
3 green onions, chopped
2 cups shredded pepper jack cheese
6-8 tortillas, warmed
Directions
1. Place chicken, oil, water and seasonings in a heavy saucepan. Stirring constantly, bring to boil and then reduce to simmer for 15 minutes. Drain well.
2. Return drained chicken to saucepan. Toss with chopped zucchini and onions. Sauté 1 minute or less, cooking veges slightly tender.
3. Spoon hot filling into tortillas. Sprinkle with cheese. Serve immediately.
