Grilled Stuffed Peppers
Ingredients
2 extra-large peppers (Corno Di Toro pictured. Poblanos are also great to stuff.)
¼ cup water
2 Tbsp oil
8 oz ground beef
2 cloves garlic, minced
¼ cup yellow onion, chopped
¼ tsp salt
¼ tsp chili powder
½ cup pepper jack cheese, shredded
¼ cup sour cream
4 pieces bacon
Tortilla chips for serving
Directions
1. Cut peppers lengthwise, deseed.
2. Place water and oil in a stovetop skillet. Heat to medium. Brown beef with garlic, onions and seasonings.
3. When beef is brown and water reduced to “gravy”, turn off heat. Stir in cheese and sour cream.
4. Spoon mixture into peppers. Wrap one piece of bacon around each pepper half.
5. Grill peppers minutes, until bacon well-cooked.
6. Serve with tortilla chips.
