Roasted Cauliflower Casserole

Ingredients
4 pieces bacon
1 head cauliflower, cut into florets
1 small yellow onion, diced
1 yellow summer squash, cut bite-sized
½ cup Italian salad dressing
1 bunch spinach
½ cup Colby cheese, shredded

Directions
1. Preheat oven to 375 degrees.
2. Marinade cauliflower, onion and squash in Italian salad dressing for 15 minutes.
3. Fry bacon crisp, reserve grease. Crumble bacon.
4. Grease a baking sheet with bacon grease. Pour marinated veges and juice onto sheet. Bake 15 minutes.
5. Remove veges from oven. Drain excess marinade.
6. Spread spinach on baking sheet. Top with veges, sprinkle with bacon and cheese. Finish under oven broiler until cheese is melted.
