Fresh Potato & Tomato Frittata

1 extra large potato or 4-6 fingerlings, scrubbed clean and cut bite size
Vegetable oil
Dickie Bird Farm Garlic Salt
Fresh milled pepper
6 eggs
2 Tbsps sour cream
2 green onions, chopped
4 cherry tomatoes, quartered
2 pieces bacon, cooked crisp

1. Preheat oven to 375 degrees.
2. Toss potatoes with oil. season with garlic salt and pepper. Spread on a baking sheet and roast 15 minutes.
3. In a large bowl, whisk together eggs and sour cream. Season with salt and pepper.
4. Grease an 8 inch square pan.
5. Place cooked potato pieces in square pan with cherry tomatoes. Pour egg mixture over top. Sprinkle with bacon and onions.
6. Bake 35-40 minutes, until egg is well set.
