Sausage Stuffed Peppers
Ingredients
5 large bell peppers, halved and hollowed
8 oz spicy ground sausage
1/4 cup salsa
8 oz jalapeno cream cheese
1 sleeve club crackers, crumbled
Tortilla chips for serving
Directions
1. Preheat oven to 350 degrees.
2. Grease a baking sheet. Place peppers cut side down on sheet. Bake 10 minutes.
3. Meanwhile cook sausage and salsa in a stovetop skillet until meat is browned and salsa liquid is reduced.
4. Turn heat to low and stir in cream cheese to melt.
5. Remove from heat and stir ½ cup cracker crumbs into skillet.
6. Spoon hot filling into partially cooked peppers. Sprinkle with cracker crumbs and bake an additional 20-25 minutes until top is brown.
7. Serve with tortilla chips.
