Stuffed Lemon Squash

Ingredients
Lemon squash, halved*
2 Tbsp butter
2 cloves garlic, minced
8 oz kielbasa, chopped
2 banana peppers, chopped
2 green onions, chopped
1 small tomato, chopped
Salt
Crushed red pepper
¼ cup seasoned breadcrumbs
¼ cup American white cheddar, shredded

Directions
1. Preheat oven to 375 degrees.
2. Grease a baking dish. Lay squash cut side down. Bake 15 minutes.
3. Meanwhile, melt butter in a stovetop skillet. Sauté garlic until fragrant. Add kielbasa, peppers, onions and tomatoes to skillet. Season with salt and pepper. Cook 1-2 minutes at high heat.
4. Remove skillet from heat. Stir in breadcrumbs and cheese.
5. Remove squash from oven. Scoop out seeds. Fill with sausage mixture. Return to oven to bake an additional 15 minutes. Serve hot.


*Sub with any summer squash
