Crispy Fried Catfish with Homemade Tartar Sauce

For catfish:

Ingredients
4 catfish filets
Dickie Bird Farm Garlic Salt
Cayenne Pepper
Fresh milled black pepper
Flour
Yellow Cornmeal
Egg
¼ cup shortening or lard for frying

Directions
1. Season catfish filets with garlic salt and pepper.
2. Sprinkle each side of filets with flour and cornmeal.
3. Whisk egg in a shallow dish. Coat filets, and then sprinkle again with flour and cornmeal. Cover and allow 10 minute rest.
4. Melt shortening in a frying pan. Heat to 350 degrees. Fry filets golden on each side. Keep in warm oven until serving.


For tartar sauce:

Ingredients
1 cup mayo
¼ cup homemade pickle relish
1 Tbsp lemon juice
1 Tbsp minced onion
Dash Dickie Bird Farm Garlic Salt
Dash Cayenne Pepper
Pinch Dickie Bird Farm Crushed Red Pepper

 Directions
Combine all ingredients. Stir well. Cover and refrigerate at least 1 hour before serving.
