Garlic Parsley Sweet Potato Mash

Ingredients
5 lbs white sweet potatoes (or traditional orange type)
¼ cup butter
2 tsp dried parsley
1 tsp minced onion
1 tsp Dickie Bird Farm minced garlic
¼ tsp fresh milled black pepper
Salt to taste

Directions
1. Preheat oven to 350 degrees.
2. Pierce each potato with a fork. Place in casserole dish. Cover and bake until soft, about 2 hours. Remove from oven and cool potatoes in fridge until skins loosen. Discard skins to compost.
3. Melt butter in a stovetop saucepan. Add potato meat and seasonings and cook on low heat for 15 minutes. Mash with a potato masher and add salt to taste before serving.
