Ham and Spaghetti Squash Au Gratin

Ingredients
2 spaghetti squash
3 tablespoons butter
¼ cup red onion, chopped
1 bell pepper, chopped
½ cup ham, cubed
¼ tsp Dickie Bird Farm Garlic Salt
Pinch Dickie Bird Farm Crushed Red Pepper
1 cup sour cream
1 cup white cheddar cheese, shredded
Fresh milled black pepper


Directions
1. Preheat oven to 350 degrees.
2. Cut the spaghetti squashes in half and remove the seeds. Place face up in a casserole dish with a ¼ inch of water. Cover loosely with aluminum foil and bake 1 hour 30 minutes.
3. Melt butter in a stovetop skillet. Season onions, peppers and ham with garlic salt and red pepper. Sauté tender. Remove from heat and stir in sour cream.
4. Use a fork to scrape the insides of the squash and transfer to a greased casserole dish. Spoon veges in sour cream sauce over squash. Top with cheese and fresh milled pepper and bake 15 minutes. Finish under broiler for a crusty cheese top.
