Salted Cajeta Cookie Bars

Ingredients
1 cup butter, softened
1 cup brown sugar
3 ½ cups flour plus 3 Tbsp flour, divided
Shortening
14oz Cajeta or caramel ice cream topping
12oz salted peanuts
12oz semi-sweet chocolate chips

Directions
1. Preheat oven to 375 degrees.
2. Beat butter and sugar until creamy. Add flour, beat to fine crumbles.
3. Grease a large baking sheet with shortening. Distribute crumbles and press gently into place. Bake for 10 minutes.
4. Remove crust from oven, sprinkle with peanuts and chocolate chips.
5. Whisk together Cajeta and 3 Tbsp flour. Drizzle over bars. Return to oven for an additional 15 minutes. Cool completely before cutting into bars.
