Homemade Hot Pockets

Ingredients
Bread dough, fresh or refrigerated
Cornmeal
1 Tbsp butter
½ cup ham, chopped
¼ cup green pepper, chopped
2 green onions, chopped
1/8 cup tomato, chopped
¾ cup Monterrey Jack cheese, shredded


Directions
1. Preheat oven and a baking stone to 375 degrees.
2. Melt butter in a skillet. Sauté’ ham, green pepper, onions and tomatoes until tender and moisture reduced, about 1 minute.
3. Sprinkle cornmeal on a clean surface. Roll out dough. Cut into 5” by 7” inch rectangles. Sprinkle with additional cornmeal, then cheese.
4. Spoon filling on top of cheese.
5. Work quickly to fold long sides of each rectangle together and then pinch to seal. Pinch to seal ends.
6. Place seam side down on preheated stone. Cut small vents with a sharp knife.
7. Bake 20-25 minutes. Serve hot.
