Butternut Squash Bake

Ingredients
2 large butternut squash
½ cup ricotta cheese
3 green onions, chopped
8 oz kielbasa sausage, sliced
2 Tbsp butter
1 tsp parsley
1/2 tsp Dickie Bird Farm minced garlic
¼ tsp black pepper
¼ tsp cayenne pepper
1 cup crushed saltine crackers

Directions
1. Heat oven to 350 degrees.
2. Stab each squash with a knife. Place in a casserole dish with 1 cup water. Bake 1 hour 30 minutes. Remove from oven.
3. Scoop squash “meat” into an 8x8 casserole dish. Discard seeds and peels.
4. Spoon ricotta on top of squash. Distribute onions and sausage over ricotta. Cover loosely with foil and bake 25 minutes. Remove from oven.
5. Melt butter in a skillet. Add seasonings. Toss with crushed pepper. Sprinkle over casserole and return to oven an additional 15 minutes to brown.
