Potato Au Gratin with mushrooms

Ingredients
3 Tbsp butter
3 Tbsp flour
1 cup cream
½ cup water
½ cup sour cream
½ tsp Dickie Bird Farm minced garlic
1 tsp parsley
Fresh milled black pepper
1 cup cheddar cheese shredded
8 yellow potatoes, sliced thin
¼ cup sweet yellow onion, chopped
½ cup mushrooms, sliced
¼ cup Romano cheese shredded

Directions
1. Preheat oven to 350 degrees.
2. Melt butter in a large saucepan.
3. Whisk in flour over medium heat.
4. Add cream and water, stir smooth.
5. Stir in sour cream, garlic, parsley. Mill with pepper.
6. Add cheddar to melt.
7. Grease a 3 qt casserole dish. Layer potatoes, half of sauce, onions and mushrooms. Top with remaining sauce. Sprinkle with Romano cheese.
8. Bake 1 hour. Let stand 5 minutes before serving.
