Spinach, bacon and scallion Meiche

For Crust:
1 cup flour
¼ tsp salt
½ cup Crisco
2 Tbsp water

1. Preheat oven to 350 degrees.
2. Combine all ingredients in a large bowl and mix thoroughly.
3. Roll dough out on a floured surface.
4. Place in pie dish. Poke bottom with a fork a few times.
5. Bake 10 minutes. Remove from oven.

For Filling:
6 eggs
3 Tbsp cream
Salt and pepper
2 pieces bacon, cooked and crumbled
2 scallions (green onions), chopped
1 handful fresh baby spinach

1. In a large bowl, whisk together eggs and cream. Season with salt and pepper. Add bacon, onions and spinach to bowl. Stir to coat.
2. Pour mixture into prepared pie dish.
3. Bake 25-30 minutes, until egg has set.
